Quick & Easy Recipe: Skinny Turkey Meatloaf

Face it, we all crave comfort food. But “comfort food” can mean a lot of different things. Sometimes, it means greasy pizza and fries after a night out. Sometimes, it means digging into a pint of Ben and Jerry’s and a movie. And other times, it means you’re feeling nostalgic for the kind of food only mom (or maybe grandma) can make. That includes home-cooked classics, like shepherd’s pie, spaghetti and meatballs, and, yes you guessed it, meatloaf.

One thing all these various kinds of comfort food have in common? They’re not exactly known for being particularly healthy. Fortunately, there are plenty of skinny versions of these must-have foods, including those of the home-cooked variety.

If you find yourself craving mom’s meatloaf, this skinny turkey meatloaf is a great healthy alternative that should still fill you up (on nutrition and nostalgia).

When In Doubt, Go For Turkey

When it comes to clean eating, it’s always a good idea to swap out ground beef for ground turkey when possible. (And fortunately, it’s pretty much always possible.) It’s a simple swap that significantly improves your meal’s health profile immediately. It’s also a pretty easy change to make. Turkey offers just as much flavor as beef with much less fat and grease, so it keeps you feeling lighter.

This skinny turkey meatloaf also cleans up the traditional comfort food with some less-expected ingredients. In this recipe, rolled oats and chunky salsa are clean ingredients that add flavor and texture to this skinny dish. Sounds unusual, but it helps keep this meatloaf most and flavorful just like the original.

But good news for you ketchup lovers. That’s one thing this recipe hasn’t changed. You can top this skinny meatloaf with the same ketchup your mom always used,

    Prep and Serving Tips

There’s not a whole lot to making meatloaf. It’s pretty much what it sounds like, which is why it’s such a common home-cooked weeknight classic. One prep tip we can share? If you hate messy hands (that’s most of us over the age of four, right?) put all the ingredients in a large plastic bag. Then just squish the bag to combine the ingredients instead of diving fingers-first into raw meat. Probably better and more sanitary for everyone involved, right?

To really complete that homemade meal flavor, try serving this skinny turkey meatloaf with some of our other classic skinny sides, like these creamy garlic and thyme mashed potatoes or these clean eating oven roasted mushrooms.
